20 pounds and 4 inches in 8 weeks and still going!!!

Flat Belly Diet CookbookI used to say, "never trust a skinny chef." Of course, lately I had a hard time saying it outloud since my pants were so tight breathing became a chore. Let's just say that as a chef, I was enjoying the fruits of my labor a little too much. At the urging of my doctor, the requests of my wife, and the fit of my pants, something had to be done.

I was not what I would consider obese, but I was not happy with my own body image, or the fit of my clothing. As a New Year's resolution for 2010, I resolved to lose weight. That became my personal Kitchen Goal. At the start of the year, I weighed 214 pounds. Just 8 weeks later, I was down to 193 and shed 4 inches from my waist. During that time, I did no additional exercise. In fact, I had surgery and was on light duty for 4 of the 8 weeks!

Like many dieters, and most of clients of Kitchen Goals, I didn't have the first clue on how to get started. While at a store I picked up a copy of "The Flat Belly Diet Cookbook®" and thumbed through the pages.

First, the diet made sense to me. I am a logical person and if I'm going to follow advice, it can't seem far-fetched. Next, the recipes looked good. Sold!

What happened?

As my wife and I reviewed the diet, I suddenly knew what my clients must feel like during a consultation. I realized that I had to go outside of my comfort zone and do things diffrently if I wanted to reach my goals. Yes, I had to practice what I preach.

For the next 8 weeks our diet consisted of meals prepared exclusively from the Flat Belly Diet Cookbook®. I found myself trying new foods, cooking differently, and even shopping differently. I was the teacher AND the student. There was a learning curve even for me. Plus, there was an initial change to my grocery bill because I had to stock new staple items that were not usually part of my pantry - even as a chef.

People started to notice the difference. My face became slimmer and my pants became baggy. When I took my meals with to my office, colleagues would ask if I fell off the diet bandwagon. When I told them that the meal I was enjoying was part of the diet, they'd ask for a taste. That led to requests for the recipes.

Some of my colleagues tried a recipe or two and failed. That led to requests for helps and tips which I am always glad to give.

What did I learn?

  1. Recipes are great, but techniques and skills are more important.
  2. New methods or concepts may require new tools and open minds.
  3. An old dog can learn new tricks.
  4. The help and guidance required by the average American home cook goes beyond the pages of any book.

How does this apply to Kitchen Goals?

If nothing else, my own personal journey has increased my confidence in the value provided by Kitchen Goals. I also have a new-found empathy for my clients.
